It’s been ages since I’ve been active on the blog; and as lazy as I might seem, honestly, so much has been happening in the past couple of months. Some good, some not too good.

The latest happy moment that has been added to our family’s book of memories is, my baby sister (who is not really a baby anymore, but it took us a while to realize she actually grew up)  got engaged :)) So we were quite busy with the preparations.

However, another turning point in our lives is, my parents, who have lived in Saudi Arabia since 1980, have retired and returned home – back to Istanbul. Now, of course for those of you who are expatriates living far away from your home can understand this…however, for the first time, for me and my siblings, we are experiencing what is called ‘gurbet’ in Turkish…which basically translates to ‘being away from your country’ or ‘being in a foreign country’. You see, being raised in Saudi Arabia, we always felt like it was home to us. With my parents leaving, the place we actually called ‘home’ for 30+ years is now a foreign land to us. This comes to prove that home is where your loved ones are, regardless of where you have spent your life.

So as you can see, the packing and celebrating and bittersweet moments have kept me busy and somewhat unable to write anything for all this time.

Now for some steak-rolls…

This dish might have been made by someone and may be available somewhere, but to my best knowledge, I made it up because I really didn’t know what to cook at the time. I went to the supermarket and picked up some frying steaks with no intention of frying them! :D I thought, well, let me just prepare a pepper and mushroom filling and see how they turn out rolled. And they turned out great! :)) (btw meat, capsicum peppers and mushrooms are an amazing trio!!!)

Let’s begin by preparing the filling!

Heat the olive oil in a shallow pan for a minute. Add the garlic and stir in the sliced mushrooms. Sauté for about 3 minutes. Add  the diced peppers and cook for 2-3 minutes stirring occasionally. Add the seasoning (basil, thyme, salt, pepper, red pepper flakes)

Reduce heat, cover the pan and let it cook for about 15 minutes; stir occasionally during this time. Remove from heat and set aside until slightly cooled.

Season the steaks with salt, pepper and thyme. (You just need to sprinkle some on both sides and rub with your hands)

Add a generous amount of pepper and mushroom filling into each steak.

Place each steak roll in a baking dish and bake in preheated oven for about 45 – 50 minutes.

Meanwhile, prepare the tomato sauce. In a small saucepan,  heat 1 tablespoon of olive oil on medium/low heat. Add the remaining sauce ingredients

Cook until the sauce bubbles while stirring occasionally. Once the sauce begins to bubble, reduce heat and cook for a further 10 minutes. Remove from heat and pour sauce over baked rolls!

(This goes really well with mashed potatoes…just saying!) ;)

Steak Rolls
 
Steak Rolls with Multicolored Peppers and Mushrooms
Ingredients
  • 6 large fillet frying steak
  • a bit of salt, pepper and thyme for seasoning the steaks
For the Filling:
  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed (or finely chopped)
  • 8 button mushrooms, thinly sliced
  • 1 green, 1 yellow, 1 red peppers, chopped into small cubes
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • ¼ teaspoon basil
  • ½ teaspoon thyme
For the Tomato Sauce:
  • 1 tablespoon olive oil
  • 2 medium tomatoes, minced in the food processes or finely chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon red pepper paste
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon basil
  • ½ teaspoon thyme
Instructions
Prepare the Filling:
  1. Heat the olive oil on medium heat in a shallow pan for a minute.

  3. Add the diced peppers and cook for 2-3 minutes stirring occasionally.
  4. Add the seasoning (basil, thyme, salt, pepper, red pepper flakes)
  5. Reduce heat, cover the pan and let it cook for about 15 minutes; stir occasionally during this time.
  6. Remove from heat and set aside until slightly cooled.
Assemble the Steak Rolls
  1. Preheat oven to 200 degrees C (about 400 degrees F). Grease a medium sized baking dish with olive oil.
  2. Season the steaks with salt, pepper and thyme. (You just need to sprinkle some on both sides and rub with your hands)
  3. Add a generous amount of pepper and mushroom filling into each steak.
  4. Roll neatly until the end.
  5. Place each steak roll in a baking dish and cover with aluminum foil.
  6. Bake in preheated oven for about 15 minutes covered; remove the foil and bake for a further 30 - 35 minutes.
Prepare the tomato sauce.
  1. In a small saucepan, heat the olive oil (about a minute) on medium/low heat.
  2. Add the remaining sauce ingredients into the saucepan and stir.
  3. Cook until the sauce starts bubbling while stirring occasionally. Reduce heat and cook for a further 10 minutes.
  4. Remove from heat and pour sauce over baked rolls!
