I don’t know if you’ve noticed but this is the cast iron pots and Dutch Oven era! A lot of craze about it!! Just as I was thinking of getting one myself, my close friend Mariam’s mom got one for me! What an amazing gift!!! :)))

I’ve tried a few things in it and well, I must say, it works perfectly! Or maybe its just psychological and my food just tastes great anyway :p

And the best thing is if you are really struggling on what to cook, just throw in a bunch of ingredients and stick it in the oven and voila…you get an amazing meal!

My cast iron pot is from Korkmaz; it’s a Turkish brand ( I love their stuff)!

Vegetables in Pot

 This is a really easy dish and tastes great! All you need are a couple of potatoes, a pack of frozen mixed vegetables and some ground beef and you’re good to go!

Peel the potatoes and cut them into cubes; place in pot. Add the mixed vegetables (make sure they’re thawed first though).

Prepare the ground beef: combine the ground beef, finely chopped onions, calrose rice, olive oil, salt, ground black pepper, red pepper flakes and thyme and knead until everything is well combined. Let it rest for about 20 minutes before shaping into meatballs.

 

Meat Balls with Sauce

Take a handful of the ground beef mixture and roll into 3-inch balls (slightly larger than a walnut). Neatly place each meatball on top of the vegetables.

Prepare the tomato sauce: Combine the tomato paste, red pepper paste, olive oil, black pepper,  salt, and hot water and mix well. Pour on top of the meatballs.

Bake in a preheated oven for about 1 hour.

Meatballs with Vegetables

Ingredients
For the Vegetables
  • 1 pack frozen vegetables, thawed
  • 2 medium sized potatoes, peeled and cubed
For the Meat Balls
  • ½ kilo ground beef
  • 2 medium onions, finely chopped
  • Half a cup of washed and drained cal rose rice
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes
  • ½ teaspoon thyme
For the Tomato Sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon red pepper paste (optional)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ½ cup hot water
Instructions
  1. Preheat oven to 200 degrees C (about 400 degrees F).
  2. Place the cubed potatoes and mixed vegetables into a cast iron pot.

Note: The measurements I use are:

1 cup = 250 ml.

1/2 cup = 125 ml.

1 teaspoon = 5 ml.

1 tablespoon = 15 ml
